Brisket a la Gon
Kobe brisket, smoked over a long period of time at low temperature, seasoned with the chef's secret mix of chills and spices. Served with fresh home made breads, tortillas, and other sides. (Slaws, salsas, BBQ bourbon beef jus, etc)


Cochinita
Locally farmed pig, marinated in blood orange juice, annatto seed paste and seasonings, wrapped in banana leaves and slow roasted under mesquite and hickory woods. Served with home made tortillas and salsas, pickled red onions and habaneros.
